On Tuesday 4th April, Executive Chef of Rusacks St Andrews and inaugural MasterChef: The Professionals winner, Derek Johnstone will be joined at the pass by 2022 MasterChef: The Professionals finalist, Sagar Massey to cook a special four course menu at Rusacks St Andrews rooftop restaurant, 18.
Sagar who worked under Derek at 18 has created a menu with Derek that marries Sagar’s Indian heritage focusing on bold flavours, delivered with exceptional technique and showcasing local Scottish suppliers. Furthermore, Sagar was inspired to audition after chatting with Derek, who won the inaugural BBC Masterchef: The Professionals, where Greg Wallace enthused ‘Derek’s balance of textures and flavours are nothing short of genius’.
Guests will enjoy a starter of potato chaat with crispy bread, tamarind and chilli, followed by orange-glazed Scottish langoustine with roast carrot, cardamon and a white lentil sauce. The main course features coffee glazed spiced duck served with a rich confit duck leg, braised fennel and duck sauce. For dessert, diners will enjoy rum roasted pineapple with mango and yoghurt foam, rum baba and roasted chocolate.

“I’m really looking forward to welcoming Sagar back into the 18 kitchen, where he was my sous chef when we launched. He shares my philosophy of cooking beautiful Scottish produce and his deft use of spice and seasonings from growing up in New Delhi, have been really inspiring for my own cooking too.’
The chef’s dinner with Derek Johnstone and Sagar Massey is priced at £75 per person and includes a glass of Champagne and four course menu.
