On Sunday 25th January, for one night only, two of Scotland’s most celebrated chef talents, Stuart Ralston (Founder of The Aizle Hospitality Group) and Isaac McHale (Chef Owner of The Clove Club**) will join forces for a four hands Burns Night dinner at Ralston’s Lyla* Restaurant, Edinburgh.
With three Michelin stars between them, the two Scottish chefs will serve a ten-course tasting menu that pays homage to shared Scottish heritage: Isaac hailing from the Northern Coast of Orkney and Stuart from Glenrothes, Fife. With the very best highlands and Scottish Isles produce at their fingertips, the menu will bring together classical French techniques and a mutual appreciation for international influences that span from Sichuan, Southwest China to central Japan. The chefs will capitalise on the unique ingredients stored in the restaurant’s dry-age fridges, as well as first dibs on produce from David Lowrie Fish Merchants, John Vallance Scottish seafood and Burnside Farm Foods, for the finest wild Scottish game.
A ceremonious haggis dish will commemorate Scotland’s national poet, Robert Burns, and will form a central part of the multi-course experience, served in the 28-seater dining room. Upon arrival, guests will be seated in the upstairs drawing room, for an interactive service of whisky-based cocktails and snacks, before moving down to the Georgian dining room, for a laid-back fine dining experience where a number of dishes will be finished tableside.
With Isaac’s entourage, The Clove Club’s Head Chef Rhys Lebreux and Restaurant Manager Daniel Ribeiro, who will make their way up North to work alongside Lyla’s front of house team and award-winning sommelier Stuart Skea. The menu is bookable via SevenRooms, for £225 per person including a welcome drink, with the option of adding the wine pairing on top.
On the upcoming collaboration, Ralston says: “It’s not every day that we get the chance to welcome a World’s 50 Best chef through our doors at Lyla, or that I get the chance to cook with another chef who understands the true beauty and sanctity of the ingredients that Scotland has to offer. We’re excited to get cracking in the kitchen and put on a very festive Burns Night celebration.”
Cooking back in Scotland for the first time in two years, McHale says: “It’s an honour to return home to cook in Scotland after so many years. Scotland is where my relationship with food began, and coming back for Burns Night - alongside a chef like Stuart who shares a deep respect for Scottish ingredients - makes it all the more special.”
