At the elegant heart of The Balmoral, Palm Court has unveiled a new Elevenses menu; a refined celebration of mid-morning indulgence, crafted under the direction of Executive Pastry Chef Ross Sneddon, Executive Chef Paul Hart, and Palm Court Manager Omar Ismail.
An ode to the cherished British ritual, Elevenses invites guests to pause and savour the beauty of the mid-morning hour. Available daily from 9am until 12 noon, this gentle experience encourages guests to slow down and delight in the delicate patisserie beneath Palm Court’s glittering Venetian chandelier and graceful glass dome.
As the art of viennoiserie continues to enchant, each pastry on the new menu reflects the precision, time, and craftsmanship synonymous with The Balmoral’s kitchens. Layered textures, exquisite ingredients, and thoughtful balance transform a simple morning pastry into something quietly extraordinary.
The Autumn Elevenses Collection includes:
• Caramelised Pain au Chuao - Pain au chocolat filled with Amedei Chuao 70% chocolate, glazed with caramel
• Fruit and Almond Pain Suisse - Nine fruits soaked in Rare Tea Earl Grey, with marzipan and spice
• Balmoral Croissants / Raspberry Jam Crescents - Classic and filled crescents, buttery and crisp
• Blackberry and Pear Twists - With candied ginger and autumnal fruit
• Eventail: Chocolate and Pistachio - Four chocolates with salted, crunchy pistachio praline
• Maritozzi - Soft brioche filled with Madagascan vanilla cream
Speaking on the new menu, Chef Ross Sneddon, comments:
“We wanted to honour this charming mid-morning ritual with pastries that are both timeless and inventive. Each one is crafted with care and patience - from the layering of the dough to the finishing touches that make them sing. It’s about creating a quiet, luxurious pause in the day, paired with exceptional teas and coffee that complement each bite.”
Each pastry is conceived as a harmony of taste and texture, designed to pair perfectly with Palm Court’s extensive selection of fine teas and seasonal beverages. Guests may choose from 88 loose-leaf teas sourced by the Rare Tea Company, or sip one of the seasonal creations such as toasted hazelnut mocha, peppermint white hot chocolate, spiced orange or salted caramel hot chocolate, and the classic pumpkin spice latte.
With over three decades of experience, Ross Sneddon brings artistry and precision to The Balmoral’s patisserie. As UK Regional Executive Pastry Chef for Rocco Forte Hotels, he oversees the pastry, bakery and confectionery teams at The Balmoral and Brown’s Hotel in Mayfair, London, working closely with celebrated chef Adam Byatt to uphold the group’s commitment to excellence.
Alongside him, Executive Chef Paul Hart and his talented kitchen brigade ensure that every detail of the Elevenses experience, from the flavours on the plate to the rhythm of service, embodies Palm Court’s enduring reputation for grace, balance and understated indulgence. Together with Palm Court Manager Omar Ismail, they have created a setting that captures the very essence of The Balmoral’s hospitality: timeless, elegant and quietly remarkable.
Beneath the soft light of the glass dome, surrounded by hand-painted De Gournay wallpaper and blossom trees, Elevenses at Palm Court becomes more than a pause; it is a gentle return to the art of unhurried pleasure at the heart of one of Britain’s most iconic hotels.
Available daily from 9am until midday, pastries are priced individually.
