An award-winning Scottish craft brewery is launching a “craft beer residency” at Bonnie & Wild in Edinburgh next Thursday, complete with an extensive menu of tailored food and drink pairings.
The four-week residency at Bonnie & Wild will see Aberdeen brewery Fierce Beer take the top city centre spot, which attracts 1500 guests daily to enjoy food from the likes of El Perro Negro, Chooks and Creel Caught.
As part of the residency, Fierce’s Cicerone-trained team have worked with Bonnie & Wild chefs to pair their nine beers with popular dishes from across the Bonnie
& Wild marketplace.
Richard McLelland, Sales Manager at Fierce Beer, said: “We’re really excited by this residency at Bonnie & Wild. It’s a great opportunity for Fierce Beer to show off its range of award-winning beers to a wider audience within Edinburgh city centre. Having it run throughout most of October gave us the brilliant excuse to showcase our brand new Oktoberfest 2025 Festbier, as well as a few other popular beers, including low and alcohol-free alternatives.”
The Fierce Beer residency follows August’s Thistly Cross Pop-Up Cider Bar at Bonnie & Wild that saw a spike in cider sales during the month, with many of the Bonnie & Wild kitchens such as Kochchi, Joelato and Creel Caught creating bespoke cider menu specials for guests.
For the Fierce Beer activation, guests will be encouraged to try food and beer pairings designed to enhance the flavours of each dish and drink.
Mr McLelland added: “Working with the various kitchens at Bonnie & Wild in creating a pairing menu, matching our delicious beers with the beautiful food available at Bonnie & Wild, has been a lot of fun. We’re really excited about hearing what people think of our pairings! A few personal recommendations include our Oktoberfest 2025 Festbier with El Perro’s Negro’s famous Black Dog Burger, our iconic Iron Brew with some Hot Honey Tenders from Chooks, or a BBQ Chicken Pizza from east PIZZAS washed down by our Mexican Cerveza Lager.”
