A pop-up bar with iconic views has returned to Edinburgh this summer.
Skyline Sips is back for its third year at Level 5, St James Quarter. The rooftop bar, situated between Everyman Cinema and Roomzzz Aparthotels, has breathtaking views of Calton Hill and across Leith towards Fife.
This year, the venue has teamed up with the world’s number one vodka brand, Smirnoff, to showcase their Miami Peach drink.
Visitors can also enjoy mouth-watering Neapolitan pizzas, thanks to a collaboration with St James Quarter pizza restaurant, Salerno and also burgers and wings from Gordon Ramsay's Street Burger.
Skyline Sips is open Fridays, Saturdays and Sundays from 12pm-11pm until 13th June. After this date, the bar will be open 7 days a week, through until 31st August.
Michael Donovan, Managing Director, Sips said:
“Our first Skyline Sips at St James Quarter was back in 2022 and we’re really delighted to be back for a third time. It’s the perfect location for us on the roof of Edinburgh’s iconic retail and leisure district.
“We’ve created a friendly, chilled-out bar, with quality food and a wide range of drinks. We like to think of it as an oasis of calm in a busy world!
“This year, we’re proud to have teamed up with Smirnoff Miami Peach and will be bringing the taste of Miami to Edinburgh with some exciting cocktails, including our delicious Pink Flamingo!
“We’ll also be serving up burgers and wings from Street Burger and fresh, Neapolitan pizzas with our friends at Salerno. The bar is a great place for after-work food and drinks, a night out with friends, or just somewhere to relax and enjoy the vibes and the view!”
Established in 2016, Sips is an Edinburgh based pop-up bar company that has operated at festivals and events including the Royal Highland Show, Fly Festival, Musselburgh Racecourse, and the Edinburgh International Festival.
