Embodying the placemaking appeal of New York’s most vibrant neighbourhood dining scene, and the lustworthy loft-style vibes of the city, The Spanish Butcher, Edinburgh will be a tasteful destination in every respect.
Upon arrival at the street level main entrance, with a second entrance ensuring accessibility for all, patrons will be welcomed by the Maître D' into the bar area. A journey of reveal and surprises awaits through a fusion of ultra-luxe comfort, rich deep tones, the finest natural materials, and bold, edgy industrial accents; all offset with The Spanish Butcher’s exceptional food and relaxed day-to-night conviviality.
Unique design characteristics of the new restaurant, which features The Spanish Square; a 20-capacity private dining space with dramatic shutters ensuring maximum discretion, include a striking bronze and copper pigment-infused resin floor, equestrian booths with leather seating in tobacco, ox blood and olive colourways, warm stained oak panelling, and, in keeping with The Spanish Butcher’s respect for mid-century principles, The Cesca Chair by Marcel Breuer creating a linear impression throughout.
Elsewhere, big, confident statements are made across exposed brick – both in untreated Terracotta and painted in The Spanish Butcher’s signature green, rattan panels framing the bar with meticulous symmetry, antique smoky mirrors, and lush Kentia palms, whilst lighting takes the equestrian rein with custom made brass and glass globe lighting strapped with leather, and bow and arrow wall sconces. A magnificent solid oak waffle pergola roof feature creates a dramatic inside-outside illusion for guests, and a geometric showpiece to marvel.
Famed for its distinctive Galicia meets Brooklyn proposition – incomparably unique in Scotland – The Spanish Butcher arrives on North Castle Street with much anticipation; an exceptional new 90-cover addition to the capital’s dining scene, with the opening date of Friday 10th May deliciously timed as a springboard into summer.
Promising vibrant Spanish and Mediterranean-inspired flavours, showcasing some of the finest dry aged beef in the world across an à la carte menu, married with the very best homegrown produce from Scotland’s larder, The Spanish Butcher will be synonymous with RUSK & RUSK’s commitment and respect to outstanding quality. Forty-five positions of employment are being created for the new restaurant.
