For one night only, just ten diners are being offered the chance to step aboard the world-class foodie destination to enjoy a bespoke seven-course menu created by Fraser Cameron, Head Chef of 1610 at The Globe Inn in Dumfries.

Winner of The Legacy Scholarship, Fraser has been repeatedly highlighted as a chef to watch, working in some of Scotland's most esteemed kitchens, including Martin Wishart at The Honours, Restaurant Andrew Fairlie at Gleneagles and Paul Kitching's Restaurant 21212.

Guests will be seated in The Bridge, Fingal’s former command room turned private dining area, where refined cuisine and the unique surroundings of the ship create an evening unlike any other in Edinburgh.

Served around one large communal table, the set menu designed by Fraser will be delivered in partnership with Fingal’s Head Chef, Pedro Barreira. Canapés will be served on arrival with a Scotch whisky cocktail and with each course, the perfect wine pairing.

Highlights of the menu include sea bass mi-cuit, beetroots, cucumber and hollandaise; confit salmon, citrus, radish and braisage sauce; venison, braised red cabbage, salt-baked swede, confit shallot and pickled blackcurrant jus; and beef, tartlet of duck liver and artichoke and hash brown served with sauce marchand de vin.

The perfect end to the evening, a Gianduja 34% hedgehog, yuzu and mascarpone will be followed by cheese, a whisky dram from Annandale Distillery, and petits fours.

“For one night only, Fraser’s carefully curated seven-course menu will showcase some of the best local and seasonal produce from around Scotland, complemented with a whisky cocktail from his personal choice local whisky distillery.”


Guest chef Fraser Cameron, Head Chef of 1610 at The Globe Inn in Dumfries, added: “I'm really excited to be stepping aboard Fingal to host this unique dining experience alongside the ship's talented galley crew.

“In the second in a series of collaborative Captain’s Table dining experiences being staged onboard Fingal this year, I've created a special seven-course tasting menu bursting with seasonal flavours from around Scotland. I think each of the dishes are the perfect fit for this world class foodie destination.

“As part of the meal, we’ll also be raising a glass (or 2!) during a specially curated tasting of Annandale Single Malt, Single Cask whisky. It is always such a pleasure to work with produce that is built on the same principles and ethos that I hold. Our guests are in for a truly special evening!”


To elevate the evening further, expertly paired wines will be available and hand-selected by Fingal’s sommelier to complement Fraser Cameron’s creations.

Fraser Cameron’s seven-course ‘Captain’s Table’ set-menu onboard Fingal Hotel is priced at £110 per head on a first come, first served basis, including three selected wines and a whisky cocktail served with the meal and on arrival from 6pm. In December, Fingal retained two prestigious Rosettes for culinary excellence by the internationally recognised Automobile Association (AA) for the fourth year running. The former Northern Lighthouse Board tender ship was developed by the award-winning team at The Royal Yacht Britannia, which is located just 10 minutes away. Fingal is now the ultimate in luxury accommodation and dining.

Fingal is located opposite the Port of Leith tram stop, which offers a direct and easy transport link between Leith, Edinburgh city centre and Edinburgh Airport.
