Michelin Guide-listed Glasgow restaurant Sebb’s has teamed up with Leith brewers Pilot Beer to launch a new pale ale, created in collaboration and rolling out across Scoop Restaurant Group venues in the city.
Sebb’s Pale Ale has been jointly developed by the Pilot Beer and Sebb’s teams, with the recipe refined through a series of tastings. The pale ale will be available on draught at Sebb’s, Ka Pao, Margo and Ox and Finch, marking a further step in Pilot Beer’s expansion across Glasgow and introducing a new house pour across four of the city’s leading restaurants.
Designed to pair with bold, spice-led flavours, Sebb’s Pale Ale is hazy and hop-forward, with tropical notes balanced by Scottish pale malt, creating a fresh, easy-drinking beer built to sit comfortably alongside the food.
The launch will be marked with a celebratory Sebb’s Pale Ale BBQ on Sunday 22 March, following the Sebb’s popular bank holiday-style BBQ format.
Priced at £35 per person, the event includes a welcome pint of Sebb’s Pale Ale, alongside multiple snacks, a mixed grill plate, sides and sauces, with DJs from Edinburgh-based online radio station EHFM Radio playing throughout the day, including sets from Al Gu, Lietzsche and Nikki Kent.
Brewed in Leith and developed in close collaboration with the Sebb’s team, the pale ale is hazy and hop-forward, with tropical fruit notes balanced by a soft base of Scottish pale malt. The hops have been selected to cut through rich, smoky and spicy dishes from the grill, making the beer as suited to the food as it is to a relaxed pint at the bar.
Ally, head of drinks, Sebb’s said: “Collaborating on brewing our own beer is something we’ve thought about doing for a long time — probably as much for our own enjoyment of good beer as anything. Sebb’s is the most bar-focused venue in our small group, and it has an incredible team of drinks-obsessed bartenders, so it felt like the obvious place to take the idea forward.
“Sebb’s Pale Ale will be available in Margo, Ox and Finch, and Ka Pao in both Edinburgh and Glasgow too, so it’ll be nice for Sebb’s to infiltrate its sister restaurants a wee bit. We wanted to brew something that’s really approachable, but also works beautifully with food, so it should sit naturally across all of the restaurants.
“Sebb’s is all about relaxed, approachable fun — great music, great atmosphere, great drinks without any fuss. The beer is the same. It feels very “Sebb’s”, easy to drink, unpretentious, but made with real care and intention.
“Pilot ticked all the boxes: a great Scottish brewery, genuinely lovely people, and they’re incredibly passionate about their craft. There’s a lot of synergy between the Pilot team and the Sebb’s team.
“Crucially, they brew delicious beers that you actually want to drink more than one of. Sebb’s Pale Ale isn’t an out-there brew that’s going to polarise people — they’ve worked with the us to create something refreshing, interesting, and delicious, which will have a really broad appeal.”
The collaboration brings together two independent Scottish hospitality brands, with Pilot brewing in Leith and Sebb’s rooted in Glasgow’s food and drink scene.
Jordan Palmer, Chief Operating Officer at Pilot Beer, said: “This beer was designed with food in mind. It is tropical and hazy, with hops that bring brightness and freshness rather than heaviness or bitterness.
“It is built to be easy to drink and to complement bold, spicy dishes, which makes it a great fit for Sebb’s. Because it has been created specifically for Scoop venues, it feels like a dream collaboration, and we feel incredibly lucky to be coming into a restaurant group with such high standards.”
Sebb’s is part of Scoop Restaurant Group, which also operates Ox and Finch, Ka Pao and Margo, and has built a reputation for bold flavours and lively, informal dining across Glasgow.
The £35 BBQ menu includes a first pint of Sebb’s Pale Ale, bar snacks, Cajun-spiced oyster mushrooms with grilled pitas, followed by beef picanha, BBQ pulled pork, grilled chicken leg and DC’s Texan hotlink sausage, with sides of crispy Jersey Royals, harissa black-eyed beans and Sebb’s slaw.
