Two Edinburgh Bakeries launch unique Macaron and Cake Tower
Mademoiselle Macaron and Mimi’s Bakehouse have announced a new collaboration which combines handcrafted French macarons with signature sponge tiers in a bespoke macaron and cake tower.

Mademoiselle Macaron and Mimi’s Bakehouse, both members of Scottish Bakers, the national trade body representing Scotland’s bakery industry, have announced a new collaboration which combines handcrafted French macarons with signature sponge tiers in a bespoke macaron and cake tower.
The product is designed as a striking alternative to traditional wedding or birthday cakes, with customers able to select from pre-set designs or a fully personalised tower, customising sponge flavours, macaron colours, and overall layout.
The collaboration unites two of Edinburgh’s top female-led bakeries. Founded in 2013 by Rachel Hanretty, Mademoiselle Macaron has built a reputation for authentic French patisserie following Hanretty’s training in Paris, and was recently shortlisted in the National Bakery Awards for Best Online Bakery. Mimi’s Bakehouse, led by Chief Operating Officer Ashley Harley, operates a network of cafés across the capital as well as a national online shop, and is widely recognised for its award-winning cakes and bakes.
Both businesses have highlighted that the partnership responds directly to increasing customer demand for a combined cake and macaron solution, while also ensuring production remains firmly rooted in Edinburgh.
